I’ve only just started my adventure into Risotto, which is essentially a rice that absorbs a lot of liquid to create a smooth and creamy dish that is indulgent, satisfying, with endless flavour opportunities. With a creamy and savoury dish, it’s best to have a crispy or crunchy topping to create some opposing textures and flavours. I went with a pan-fried kale, but toasted nuts and seeds or bacon would also be excellent choices.
