Ingredients
15-20 Brussel Sprouts
6 Slices of Thick Cut Bacon (I like hardwood smoked)
1 Wheel of Brie (Tripe Cream has the highest fat content and tastes the best - keto for the win!)

Makes Appx: 4 Servings
Place a large frying pan on medium heat burner. While pan is heating, cut bacon into small pieces and add to the pan.
While bacon begins to cook, chop off the nub end of each Brussel Sprout and then slice them in half, once all are sliced add the Brussel Sprouts to the pan.
Flip and mix the sprouts and bacon occasionally for the next 20 minutes.
After 20 minutes of pan frying, the bacon should be almost fully crisped and sprouts should be browned and tender when pierced with a fork.
Slice brie into small triangle wedges, leaving the rind on. Add the brie to the pan, and reduce heat to low. Allow brie to melt into the mixture for the next 10 minutes.
Once cheese is melted, bacon is crisped, and sprouts are tender and browned you are good to go!

You can switch up the vegetables slightly to get a nice variation on this recipe while maintaining the nutritional balance, sometimes I do:
8 - Brussel Sprouts
4 - Stalks of Asparagus (add to the pan the same time as the Brussel Sprouts)
6 -Cherry Tomatoes (add to the pan after 15 minutes)
Add: 3 Tbsp of Parmesan along with the brie. Or sub out the brie for a shredded cheddar if brie is a little too distinct of a cheese flavour for you!
