Ingredients
2 Ripe Bananas
2 ½ Cups Rolled Oats
¾ Cup Shredded Coconut (unsweetened)
1 Cup Greek Yogurt
¼ Cup Ground Flax Seed
¼ Cup Honey
⅓ Cup Chocolate Chips
1 Tsp Baking Powder
½ Tsp Salt
1 Tsp Vanilla
1 Eggs

Makes Appx: 12 Muffins
Total Prep Time: 10 Minutes
Total Cook Time: 10-12 Minutes
Preheat the oven to 350 Degrees F.
If using frozen bananas, thaw them in the microwave until they can be easily opened and added to a large mixing bowl.
After adding soft bananas to the mixing bowl, add the egg, honey, greek yogurt, and vanilla.
Use a hand blender or masher to combine all of the wet ingredients until a goopy texture is formed.
Add remaining dry ingredients to the mixing bowl and stir to combine.
Line a muffin tin or spray with cooking spray, and add a little under half a cup scoop to each tin.
Place muffin pan in the oven and allow to bake for 10-12 minutes, the tops should be lightly browned from the coconut, and a toothpick or knife comes out clean.
