Caprese Panini

Ingredients

  • 1 Loaf of Bread (I used homemade bread...and guess what? I have a vlog coming soon at how to make your own homemade bread)

  • 4 Tbsp Butter

  • 2 Tomatoes on the Vine

  • 1 Ball Fresh Mozzarella (or shredded mozzarella)

  • 1 Package Fresh Basil

  • 1 Package of Bacon (you need two cooked pieces for each panini)

  • 4 Tbsp Balsamic Glaze (I use balsamic glaze A LOT, here’s the one I use

  • 4 Cups Mixed Greens

  • 4 Tbsp Shredded Parmesan 

  • 1 Avocado

Total Cook and Prep Time: 40 Minutes

Makes Appx: 4-6 Servings (depending on how big the loaf of bread is you may want to make 2 mini panini’s per person, larger bread slices you may only require 1 panini per person)

  1. Place a large frying pan on medium heat and place desired amount of bacon strips onto the pan (about 2 slices per panini). Pan frying bacon takes around 20 minutes, flipping occasionally until desired crispiness. 

  2. Once bacon has been cooking for about 15 minutes place a large frying (or panini grilling pan) on a burner and set it to medium heat (appx 3-4 on the dial). You could also use an electric grill, in which case plug it in and preheat it to medium heat heat.

  3. Butter the outside of bread slices to prepare them for the grill. 

  4. Thinly slice tomatoes, mozzarella and avocado. 

  5. Once bacon is cooked remove it from the pan, turn off that burner, and place the bacon on some paper towel to absorb some of the grease.

  6. Assemble the panini as follows: slice of bread (butter side down on the grill), mozzarella slice, two tomato slices, 3-4 basil leaves, drizzle of balsamic glaze, two slices of bacon, 2-3 avocado slices, and top slice of bread (butter facing up).

  7. Place the sandwich on the warm frying pan (I like using my panini press as it has a heavy grill lid which weighs down the sandwich - a grill which has a closing lid works great too). If you are just using a regular frying pan, just flip the sandwich like a grilled cheese (about 10 minutes on each side). 

  8. While the panini’s are grilling, assemble a small side salad, I used: mixed greens, chopped up bacon, avocado, and tomato. Top the salad with parmesan and balsamic glaze.

  9. Once the panini is thoroughly melted on the inside (approximately 15-20 minutes on low-medium heat flipping at halfway), remove from heat, and cut in half. Pair with salad and enjoy!
