Maple Peach Bourbon Chili
Ingredients
Protein
2 lbs of Ground Beef
Canned Goods
2 Cans of Mixed Beans (540 ml Cans)
1 Can of Kidney Beans (540 ml Cans)
1 Can of Brown Sugar Beans (Appx 340 ml Can)
1 Can Crushed Tomatoes (796 ml Can)
1 Can Stewed Tomatoes (796 ml Can)
1 Can Tomato Paste (156 ml Can)
Produce

1 Jalapeno
2 Tbsp Olive Oil
1 White Onion
2 Yams (or Sweet Potatoes)
1 Peach (canned works if necessary, that’s what we used along with ⅓ of cup of the peach juice from the can)
Oils & Spices
2 Tbsp Olive Oil
⅓ Cup of Maple Syrup
⅓ Cup Peach Juice
⅓ Cup Bourbon
2 Tbsp Chili Powder
2 Tsp of Paprika
2 Tsp Garlic Powder
2 Tsp of Cumin
2 Tsp Red Chili Flakes

Makes Appx: 10-15 Servings
Place 1 large soup pot on a low-med burner with 1 tbsp olive oil, and 1 large frying pan on a low-med burner with 1 tbsp olive oil.
While oils are heating, finely mince garlic and jalapeno.
After the oil in each pan has been heating for approximately 3-4 minutes, add half of the finely minced garlic to the soup pot. Add the remaining garlic and the minced jalapeno to the frying pan. Allow both to simmer for 2-3 minutes or until fragrant.
While garlic and jalapeno are simmering, dice white onion, peaches, and yam into small chunks.
Split the diced white onion and add half to the soup pot and half to the frying pan. Allow to simmer for 2-3 minutes in the oil.
Add the ground beef to the frying pan, breaking it up with a spatula. If you are using beef from frozen defrost in the microwave before adding to the pan.
Add maple syrup to the soup pot and turn up the heat so that the syrup starts to bubble. Once bubbling, add the diced peaches to the pot, cover and allow them to simmer for 10 minutes with the syrup, onion, and garlic.
Continue to break up and stir the beef with the jalapenos, onions, and garlic - ensuring that it browns all over. Once beef is fully cooked, reduce to low and keep warm until you are ready to add it to the soup pot.
Add peach juice to the soup pot along with 1 tsp of chili powder, garlic powder, cumin, paprika, and pepper flakes and re-cover, allowing to simmer for another 5 minutes.
Add 1 tsp of chili powder, garlic powder, cumin, paprika, and pepper flakes to the frying beef and stir in.
Add diced yam, bourbon, and brown sugar beans to the soup pot, stir, and allow to simmer for 10 minutes.
Add the stewed and crushed tomatoes to the soup pot and stir, followed by the cooked ground beef, mixed beans, kidney beans, and finally the tomato paste and stir to combine. Ensure the beef frying pan is removed from the heat and the burner is turned off.
Cover the pot, keep the heat on low, and allow the whole chili to simmer for an 1 - 1.5 hours.
Test the spice level after an hour and add more spice to bring up to your desired spice level.
