Ingredients
4 fillets of Walleye or preferred white fish (if frozen, move to refrigerator over night, and place on counter half hour before cooking if still not fully thawed)
2 Tbsp of Spicy Honey (or plain honey mixed with 1 tsp cayenne pepper) - to marinade fish
1 Tbsp of Lemon Juice - to marinade fish
2 Tbsp or 30g of butter (for frying fish)
1 Medium Sized Yam
1 Tsp Olive or Avocado Oil (for frying yam)
1 Ripe Avocado
1 Yellow Pepper
1 Pear
4 Cups Arugula
1 Tbsp of Sesame Oil
Garnishes
Soy Flavoured Balsamic Glaze (or 1 tbsp soya sauce mixed with 1 1/2 tbsp balsamic glaze)
Crushed Peanuts

Instructions
Prep Time: 10 minutes
Cook time: 20 minutes
Makes appx 4 servings
Place one skillet on medium heat with cooking oil.
Dice up yam and place on skillet and allow to cook while you complete the following steps, flipping every 5 minutes. Yam pieces should be tender, and browned on either side once done (appx 20 minutes).
While yam is cooking, place a second skillet on medium heat with butter and allow the butter to melt.
While butter is melting, in a container toss the Walleye fillets in lemon juice and spicy honey.
Once butter is bubbling, lay the fish fillets down and allow to cook (approximately 3-4 minutes on each side). Fillet should be flake easily when done, and be slightly browned on either side.
While fish is cooking, slice up avocado, pepper, and pear.
Place 1 cup of arugula in each serving bowl, and top with sesame oil.
Place the cooked yam on the arugula, followed by the cooked walleye, top the bowl with the fresh cut peppers, pear, and avocado.
Drizzle soy balsamic and sprinkle crushed peanuts to finish.
