Ingredients
Taco Mix
1 Lb Ground Pork
1 Jar of Salsa (650 ml)
1 Tbsp Olive Oil
Jalapeno Peach Salsa
¼ Red Onion
1 Jalapeno
1 Peach
1 Tsp Chili Powder
T Tsp Lime Juice
Guacamole
1 Tomatoes on the Vine
½ Red Onion
1 Avocado
2 Cloves Garlic, Minced
1 Tsp Lime Juice
4-5 Drops of Sriracha
Optional: Yam Chips
1 Yam
2 Tbsp Olive Oil
Course Ground Salt
Garnish with: Cholula Hot Sauce
Instructions
Makes Appx: 6-8 Servings
Total Prep and Cook Time: 30 Minutes
Place two large skillets on the stove at medium heat. Place 1 tbsp of olive oil in each and allow them to heat for approximately 3 minutes.
While oil is heating slice yam into coins and then cut in half.
Place ground pork on the larger frying pan, breaking it up with a spatula and flipping intermittently while it cooks. Add the jar of salsa to the frying pan once pork is almost cooked - after approximately 20 minutes.
Place yam chips on the other frying pan, ensuring they are lying flat in the oil. Allow them to crisp and cook on each side, flipping after approximately 10 minutes.
While yam and pork are cooking, prepare the peach salsa and chunky guacamole.
Dice the entire red onion, split the diced onion into two small bowls.
Dice the tomato, mince the garlic, peel and chop the avocado and add it all into one of the small bowls. Add lime juice and Sriracha and mash roughly with a fork.
Dice the peach, mince the jalapeno (removing the seeds), and add to the other bowl of diced onion. Add lime juice and Chili powder and mix until everything is covered.
Add the jar of salsa to the pan of pork, reduce heat, and allow the mixture to simmer for 10 more minutes.
Check the yam after 20 minutes and if it is crispy on both sides and tender with a fork, remove from heat. If it is still a little firm, allow a few more minutes of cook time.
Once the taco pork mix is done simmering and yam chips are done - remove everything from the heat.
Lay out lettuce pieces as the taco bases, add a scoop of pork taco mix and top with guacamole and peach jalapeno salsa.
